Hi Trevor. You can only link to a URL once (to prevent spamming across the categories) but there's no reason why you can't use other/deeper links up to your allocation of 5 in other areas). You should also be able to change your listing - it's probably just not been moderated yet.

Can I also have a category for our online backup service - possibly IT managed services (which could then include things like hosted Exchange server, etc.)

It would if it was only for our online backup service, but I'm thinking about other managed servicces too - we're looking in to the possibility of Hosted Server and Hosted Exchange services too and I'm sure there will be someone along soon who already offers such services

Thanks for including the VA category. However as I've already put myself under book-keeping as that was the only one available at the time, the system won't let me put my URL in again under a different category.

Can I delete the book-keeping one or transfer it to the VA one?

I'd be happy to add those as sub-categories (of accounting) because what we want to avoid is a 'super directory' with indivual categories for anything and everything. It would get very cumbersome very quickly.
